My favorite recipe so far is a variation of Rip's Sweet Potato Bowl the Engine 2 Diet book. It's really easy, and really delicious - meat eaters and vegans agree on this.
The recipe is simple:
- 1 cooked carrot - sliced
- 1 cooked Sweet Potato - cut into bite size cubes
- 1 Mango - peeled, seeded, and cut into cubes
- 1 red pepper, seeded and chopped
- 1 can of black bean, rinsed and drained
- 1 avocado, peeled and chopped
- 1/2 bunch of cilantro
- 1 Tbsp of Braggs Amino Acid or Balsamic vinegar
